Ruth's great quiche recipe!

The other day when we went for a hike in Sedona, Ruth had made a quiche the the night before. And she used corn tortillas instead of a pastry pie crust...and it was delicious! Many of you were asking about the recipe she uses.

So here it is...!

This quiche tastes great hot or cold, so it makes for a good packed lunch the next day instead of sandwiches...


8 corn tortillas or one 8-inch unbaked pie shell (by using corn tortillas this recipe is gluten free)
1 med onion, chopped
1 clove of garlic, minced
½ to 1 red or green pepper or mixture of both
½ cup of broccoli in small florets or chopped spinach
2 or 3 mushrooms sliced (optional)
Small amount of cooked chicken or ham or cooked and crumbled bacon (optional)
2/3 - 3/4 cup of milk, last recipe I used 2/3 cup and found it worked a bit better
3 eggs, beaten
3/4 cup grated Cheddar cheese
¼ tsp pepper
2 tbsp chopped parsley
Dash of red pepper
Paprika

Fry the onion, garlic, broccoli (and any additional veggies you may want to add), in a small amount of fat/butter until transparent, stirring frequently, then add meat until heated through.  Combine the milk, eggs, 1/2 cup of the cheese, salt, pepper, parsley, and red pepper in a large mixing bowl.  Stir in the onion, veggies and meat. Grease a pie plate, then quickly warm corn tortillas in a dry fry pan until heated through, one at a time on both sides and then arrange them in the pie plate to completely cover the sides and bottom. Pour quiche mixture over the corn tortillas. Sprinkle with remaining cheese, then with paprika.  Bake at 350 degrees for 25 to 35 minutes or until a knife inserted in the center comes out clean. This is good hot or cold!


Great hiking lunch!

Some of you questioned why we're in Las Vegas. After all, we were here for five nights back in March of 2012, so not that long ago. And I think at the time we said we wouldn't need to come back again, except perhaps to explore the area around Las Vegas. 

Well this time,Vegas is on our itinerary for one reason only.

And we'll tell you about it tomorrow!

  2. Looks tasty! Great use of corn tortillas - I hate making crust and this is so much easier. I bet you are going to Las Vegas - to pick up more Casino winnings :)

    1. I am the same, I can't make crusts well and I haven't even tried making one that was gluten free. I was thinking about what to take to eat for our hike and when I thought about quiche and then I thought I could try using the corn tortillas for the crust and it worked out great.

      Nope, no casinos on this trip!

    1. You could always try making a frittata. If you google stove top frittata you will find some recipes that you only need the stove top for and really they aren't that much different from quiches.

  4. Great recipe. And a easy way to make the quiche.
    When we were in Mazatlan bought a whole mess of fresh corn tortillas and we did not care for the taste that much by them selves so made up a lasagna with them cut in strips, and was excellent.

Corn tortillas are best when they are fresh after that I freeze them and then just take them out and heat them up lightly every time I need them for wraps or with eggs or other meals but they aren't very good cold. They made a great crust and yes, they also make a great gluten free layers in a lasagna instead of using lasagna noodles.

  8. That looks really good and super easy. I wrote it down and notice there's a reference to salt when mixing the ingredients together but it's not listed in the ingredients list. No biggie -- just thought you'd want to review that. Thanks! Grace (in Tucson)

    1. Yep, it is a really easy recipe, especially when you don't have to make a crust! Sorry about the slip up for the salt. The original recipe had salt in it but I hardly ever use salt so I took it out but forgot to remove it from the instructions. Thanks for noticing.

  10. Some of the things we enjoy in the area - Red Rock Canyon, Valley of Fire, Lake Meade, Hoover Dam, Searchlight/10 cent coffee & good food at the Golden Nugget, Cottonwood Cove, Grapevine Canyon/petroglyphs, Laughlin/Riverwalk, Oatman/gold mine, just to name a few. Have fun!

    1. Well we saw Red Rock Canyon, Lake Mead and the Hoover Dam when we were here in March of 2012. The others we haven't seen so thanks for the suggestions not sure if we will have time for them but you never know! Thanks Connie and Barry.

  12. Frustrated because the corn tortillas we buy here (main brand El Paso) all contain flour so no good if you are gluten intolerant.

    1. Yes, we get very frustrated here in Canada too because we have the same problem. They call them corn tortillas but when you read the ingredients they include wheat flour, grrr!

      I did manage to buy some at a health food store though that were totally corn. Also try looking to see if you can buy any online and have them shipped to you.

      When we get back to the motorhome, I will be buying lots before crossing the border from U.S. to Canada because they are readily available there.
