Ginger tea, rain, and visitors!

Ever since I stopped drinking coffee a couple of years ago, I have struggled to find a hot drink substitute that I like. When we're in Mexico, we buy a nice Mexican hot chocolate called Abuelita made by Nestle. It's also available in the U.S., but we can't seem to get it here in Canada.

So now, I make hot chocolate the old fashioned way with cocoa powder, brown sugar, and milk. But when our daughter Lindsey was here in June, she showed me another hot drink that she liked, and it turns out that  I really like it too. Homemade ginger tea!

You need one whole fresh ginger, and one whole lemon. Chop the ginger into relatively small pieces (no need to peel it)  and put in a big pot with about a gallon or so of water. Cut the lemon into eight pieces and squeeze the juice into the pot, then putting what's leftover in as well.

Bring it to a boil, and let it soft boil for at least a half an hour. If you want more ginger flavor, leave it for longer. I like mine fairly strong, with a little bite to it. Strain out the ginger and lemon bits and then sweeten to taste. We usually use about a quarter of a cup of honey, possibly slightly more.

Obviously this makes a few cups, so we just put it in a jar in the fridge and then pour a cup out of that when we want one and put it in the microwave for two minutes.

Holy cow, did it ever rain yesterday. We got two and a half inches between midnight Tuesday night and midnight last night. The park is soaked...again! I think we must have had over 20 inches of rain so far this year.

We went for a walk in the rain just to get some fresh air...





And, we've got visitors! Larry and Anne were one of the couples on the Mexico RV caravan with us back in February. They live in Kelowna, British Columbia, but they've got relatives in Saskatchewan so they made a side trip to the park to say hi. Shame it rained the whole day, but that meant we had time to visit with them because there's not much going on at the park on a rainy day.

  1. Sometimes On cold days I just heat a mug of water in the microwave. It has to be good water, though, because heating brings out any off tastes in the water.

  2. I made tea like that all last summer, it was good hot or cold. You can also throw in mint to the mix for added flavor. Also you can start with green tea and do all the above and that makes a super healthy tea. The possibilties are endless.

  3. I use ginger tea all the time, hot or cold. It helps settle a tummy that is going "uh uh uh". (My word for a tummy that is just not happy!)

We started having it because I had a nasty cold back in early June with a miserable sore throat and cough, so Lindsey made some up for me and then asked Kevin if he would like to try it as well. Not sure it helped with the cold and sore throat but it least it is good for you and tastes good. Yes, ginger is suppose to have help with upset tummies!

    1. Yes the lake level has risen in the last month because of the rain, we are now back to the levels we were at, at this time last year. They are still well below normal levels but at least people can use their boats without too much worry getting them out to the lake itself.

  5. You can get a concentrated version of ginger tea (and other flavors), at most Asian markets. It comes in a jar and looks like jam. I love the citron one. You just stir a spoonful into a cup of hot water. mmmmm good

    1. Thanks, we will have to look for some of that next time we are near an Asian market. Think it will have to wait though until we can get to a bigger city.
