Best ribs ever.

Little bit of a late post today, but I didn't have much time this morning because we were told we had to be out by 10:00am.

Saturday turned out to be better than expected from a weather perspective. The guys weren't that ambitious but we managed to get three of us out for a short 5 km (3 mile) hike in Bon Echo Provincial Park. 

Probably one of the last nice weekend days and there were quite a few people in the park enjoying the day. Bon Echo is only a two and a half hour drive from Toronto, and slightly less than that from Ottawa so it's a good day trip destination for many people.

Good to get out for a couple of hours, but it wasn't long before happy hour would begin and of course we wouldn't want to miss out on that. So, back in time to socialize with the guys again.

We all volunteer for different meals and I'm always amazed with this group of guys how good the food is. This year, it seemed extra good. Saturday dinner was baby back ribs with sweet potato, green beans, and coleslaw. The ribs were delicious.

The ribs were done using an easy recipe that Ruth's dad used to make. You boil the ribs in pineapple juice and chopped garlic for an hour. Let them cool to room temperature. Then brush them with your favorite BBQ sauce and grill on each side for 3 to 5 minutes. 

My understanding is that the acid in the pineapple juice tenderizes the ribs. They are fall off the bone delicious.

We've known each other for 43 years!

    1. Kevin said it turned out delicious and was so easy to make. We have made it many times over the years but not so much in the last few years.

      He is indeed lucky to have so many old friends to gather with. I have a few friends that are no longer with us and as we get older it is only going to worse. It is so wonderful that they still get together every year even after all these years.

  2. So asesome you boys get together after all these years! Friends who are like family! Oh, and the lasagna, ribs, and beverages (my friend is a big Four Roses fan) all looked divine! When does Ruth go for a girls weekend away? ;)

    1. They have had such a close friendship all those years and I am so glad that they can coordinate all ten of themselves to still make this yearly guys weekend away. I see this continuing for many more years yet!

      I normally try to go out for lunch with several sets of friends but it just didn't work out this year, it seemed like we all too busy this year. Having said that Lindsey and Sadie came over Saturday and we had a girl's sleepover. We had dinner, did a craft and then watched a movie. We had a great night together. :-)
